It wasn’t until the end of the squash season that I received this recipe from my mother…. where have you been my whole life? This is one of my top two squash recipes! I hope you love it as much as we do!
For this recipe, in my favorite southern style, you will need bacon grease, two to three medium squash grated, an egg, two tablespoons sugar (less if you want less sweet squash patties), six tablespoons flour, salt and pepper to taste and half of an onion diced.
Wash then grate two or three medium squash and set aside.
In a bowl, beat the egg with a fork until it is mixed well. Add onions, sugar, flour and salt and pepper. Add in squash and mix well.
Preheat frying pan with bacon grease. Spoon the squash mixture into the grease and fry until golden brown on each side.
